Vegan Maple Pecan Blondies (Naturally Sweetened)
Chewy, golden blondies sweetened with 100% pure maple syrup and packed with crunchy pecans — a wholesome vegan treat perfect for fall or anytime!
Ingredients
- 1 ½ cups almond flour
- ½ cup rolled oats (blended into flour or use oat flour)
- ½ tsp baking powder
- ¼ tsp sea salt
- ¼ cup coconut oil (melted)
- ⅓ cup pure maple syrup
- 1 tbsp almond milk (or other plant milk)
- 1 tbsp flaxseed meal + 3 tbsp water (flax egg)
- 1 tsp vanilla extract
- ½ cup chopped pecans
- Optional: ¼ cup vegan chocolate chips or chopped dates
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
- Make a flax egg: combine flaxseed meal with water and let sit for 5 minutes to thicken.
- In a mixing bowl, whisk together almond flour, oat flour, baking powder, and salt.
- Add coconut oil, maple syrup, vanilla, almond milk, and the flax egg. Stir until combined.
- Fold in chopped pecans and any optional add-ins like chocolate chips or dates.
- Spread the batter into the prepared pan and smooth the top.
- Bake for 20–24 minutes until the top is golden and edges are firm.
- Cool completely before slicing into 9 squares.
Storage Tips
Store in an airtight container at room temperature for 3–4 days, or freeze for up to 1 month.

- Maple Drizzle: Whisk together 1 tbsp maple syrup and 3 tbsp powdered sugar for a simple glaze.
