Vegan Maple Pecan Blondies (Naturally Sweetened)

Chewy, golden blondies sweetened with 100% pure maple syrup and packed with crunchy pecans — a wholesome vegan treat perfect for fall or anytime!

Ingredients

  • 1 ½ cups almond flour
  • ½ cup rolled oats (blended into flour or use oat flour)
  • ½ tsp baking powder
  • ¼ tsp sea salt
  • ¼ cup coconut oil (melted)
  • ⅓ cup pure maple syrup
  • 1 tbsp almond milk (or other plant milk)
  • 1 tbsp flaxseed meal + 3 tbsp water (flax egg)
  • 1 tsp vanilla extract
  • ½ cup chopped pecans
  • Optional: ¼ cup vegan chocolate chips or chopped dates

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
  2. Make a flax egg: combine flaxseed meal with water and let sit for 5 minutes to thicken.
  3. In a mixing bowl, whisk together almond flour, oat flour, baking powder, and salt.
  4. Add coconut oil, maple syrup, vanilla, almond milk, and the flax egg. Stir until combined.
  5. Fold in chopped pecans and any optional add-ins like chocolate chips or dates.
  6. Spread the batter into the prepared pan and smooth the top.
  7. Bake for 20–24 minutes until the top is golden and edges are firm.
  8. Cool completely before slicing into 9 squares.

Storage Tips

Store in an airtight container at room temperature for 3–4 days, or freeze for up to 1 month.

  • Maple Drizzle: Whisk together 1 tbsp maple syrup and 3 tbsp powdered sugar for a simple glaze.
